Chicken stuffed with spinach

Yosy Finol was born in Maracaibo, Venezuela. Since she was 15, she has ventured into modeling, a situation that led her to adopt bad eating habits. At the age of 17, she participated, representing the state of Zulia, in the Miss Venezuela beauty contest, which forced her to be stricter when eating, but without the foundations and knowledge of a well-balanced and healthy diet for her body. Later, she had her first two children, with whom she gained 20 kilos with the first, and 28, with the second. From these events, he resumes, once again, the bad habit of dieting, and reduces, but this time he is unable to lose what he had gained. His body was weakened, for this reason he decided to change his eating patterns, seeking help from a nutritionist, learning a better way to eat HEALTHY and managed to lose 8 kg and 10% of fat in 2 months. He discovered his passion for cooking, and that is when he began studying to become an International Chef, graduating in 2015. From that moment on, his life changed for the better, and forever. Her love for sweets leads her to create several healthy products and desserts that do not interfere with her good eating habits. He opens his first restaurant, “Ligero Express”. Today it has a physical store called "HEALTHY AND TASTY" located at 9851 NW 58 ST suite 119B Doral Fl 33178, where it offers everyone healthy and very tasty food, frozen, ready for you to arrive at your home, heat it and enjoy it. . It also offers delicious desserts without sugar, without gluten, with a lot of flavor for those who take care of themselves by eating healthy, and also for DIABTIC and CELIACOS, to sweeten life without guilt or regrets.

Its goal is to infect at least one person a day so that they can modify their eating routines and achieve a healthy life!

Ingredients:

  • 1/2 boneless chicken breast
  • Salt and pepper to taste
  • 1/2 tbsp clarified butter
  • 2 cups frozen spinach (you can also use fresh).
  • 1 tsp creamed garlic
  • 1 tsp creamed basil
  • 30g feta cheese
  • 1 toothpick height
  • Spray oil
  • aluminum foil
  • 1/4 tsp arrowroot

Instructions:

  • Clean, defat the chicken breast and wash it.
  • Cut in Milanese, opening it, as thin as possible.
  • On a board, place transparent paper, put the chicken breast on top and cover with another transparent paper. Hit with something heavy, trying to make the chicken as thin as possible.
  • Remove the paper, season with salt and pepper to taste.
  • In a frying pan, place the clarified butter, add the spinach, garlic, basil, salt and pepper to taste, stir and cook.
  • Spread the chicken, fill with the spinach, put the cheese on top and roll up.
  • With a tall toothpick, prick the chicken roll on different sides.
  • Place the chicken wrap in a frying pan that you can then put in the oven, previously greased with cooking spray. Seal on both sides.
  • Cover the pan with aluminum foil and place in the oven at 350F/170C for 30 minutes.
  • When that time has passed, take it out of the oven, remove the chicken, place the juice that has been released in a small pan, put 2 tablespoons of that juice in a cup, add the arrowroot, beat and add to the rest of the juice. Stir and let the sauce evaporate, taking on the consistency of sauce.
  • Cut the chicken roll into rounds of approximately 1 cm. Serve and place the sauce on top of each roll.
